Ensis is a genus of bivalve molluscs in the Pharidae family. They are of medium size and live in coastal areas.\n\nIn countries like Spain, the United States, among others, they are commonly known as navajas, muergos, longorón, or razor fish, due to the special shape of their shell in the shape of a razor handle, the cutting instrument. 2\n\nIt is a species widely used in cooking, marketed fresh or canned. In many places it is an important supplement to the diet. The shells are brittle and can be easily damaged when digging for them.\n\nEnsis species prefer the clean sands of exposed beaches. They are able to dig very fast and hide deep. There are various methods to capture them.
